I should have told you, I thought you...Oh, girl!!! I should have told you, I thought you knew this about the cake, I add coconut extract!!! That explains the lack of coconut taste, which should come through more in a coconut cake, I think before I ever made it the first time I must have read some reviews that said to add the extract for more coconut flavor! I probably use a third of a small bottle for the cake and icing! I'm so sorry! I wish I had told you that! I even use cheap imitation stuff because I can't find the real thing in this town, to use real extract would be amazing I think!
